La Deriva Turns 1 – The first anniversary dinner celebration for La Deriva Italian Restaurant at the Solaz Resort, Los Cabos, was held Friday, March 2, 2018, and it was a gastronomic culmination of five local Italian chefs: Matias Forte, Antonio “Nino” Mazzella, Grulio Lupori and Diego Stefan, headed by La Deriva executive chef Emanuele Olivero.
Each presented his own rendition of one of six Italian courses served throughout the festive evening. A cocktail hour held on the grassy area facing the beach preceded the sit-down dinner with Champagne and margaritas, both amplified with additional exotic flavorings. Large outdoor heaters were spaced between the beautifully decorated candle-lit tables to keep off the chill of the evening. White napkins were folded in the shape of a boat, depicting the name of the restaurant, La Deriva (defined as drifting, as a boat drifts without an anchor, allowing the mind and body to relax and thoughts to wander). Dishes included seared octopus, lasagna with smoked fish in squid ink, risotto, escolar fish with sweet chiles, braised rib-eye, and a decadent dessert of white chocolate mousse and Sicilian citrus curd, with optional wine pairing.
Entertainment was provided by the outstanding voices of Il Divo—it means “divine performers”—three tenors whose voices permeated the full moon al fresco evening with such Italian love songs as “’O Sole Mio.”
A gigantic fireworks display rained overhead for the finale of a perfect evening at this oceanfront.
