THE PLANT & PROCESS
Agave Azul Weber. This is the most superior plant and is only harvested when it is 8 or 10 years old. After the plant is harvested it is steamed at a very high temperature. The juice is extracted and placed in 5000 liter containers to ferment naturally for 1 month.
The juice is then boiled at a high temperature, converting it to vapor which passes up through a serpentine pipe and is then cooled halfway to freezing point. To further enhance this product, it can be aged
in the barrel for 1-7 years.
THE HISTORY
Rigoberto Cuervo Rosales was born in Tequila, Jalisco. He is son of Don Malaquias Cuervo who starts a small factory in 1940 a family tradition since direct descending of Jose Cuervo the famous founder of “Tequila Casa Cuervo”.
Tequila Don Malaquias is famous for it’s quality and smooth flavor, as well for the specialty almond and coffee tequila liquors. The Family also crafts miniature white oak barrels.
THE BARRELS
These barrels are handmade by highly skilled artisans from pure white oak (only 3 per day are produced) . This is the same aged wood used in the factories to make Tequila in México. They need to be kept full of liquid to ensure that the wood does not shrink and cause the barrels to leak.
