Blackened Skip Jack Recipe!
Skipjack tuna, otherwise known as striped tuna, is amazingly underrated. If it’s line caught and bled, like the best sashimi fish always are, it’s terrific raw, rare or cooked. It has a bolder flavour than some tuna, so suits more robust sauces or garnishes. In this recipe, I’ve made a Cajun-inspired spice mix to add crunch and wow to the outside.
Ingredients
· 1Ž2 tspground coriander
· 1 tsponion powder
· 1 tspground dried thyme
· 1Ž2 tspground cumin
· 1Ž4 tspground fennel
· 1Ž2 tspground black pepper
· 1Ž4 tspground white pepper
· 1Ž2 tspmustard powder
· 1 tspsalt
· 1 kgstriped tuna loin, cut into 8 x 2 cm thick steaks
· a little oil to put on the barbecue
Instructions
Mix all the spices together with the salt. Sprinkle some of the spice mix onto a plate, lay each piece of the fish onto it, so that the whole side has a fine, even spice coating, and use your fingers to sprinkle more spice mix on top.
Heat a barbecue (or possibly a chargrill pan) until quite hot but not so hot that it is smoking.
Oil the fish lightly by dipping each piece onto an oiled plate. Cook the fish on each side for about 3 minutes. You want the tuna to still be pink in the middle for the best results.
Serve with sides of your choice; my preferences are buttered cauliflower, a potato salad, and some bruised kale with pine nuts.
BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don’t want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license.
