A quality tortilla requires four main ingredients: Corn, water, limestone/wood ash and technique. In this post we will talk about the limestone.
The name of the process which is used to create the doe used in Mexican and mesoamerican gastronomy is called “nixtamal”. This process consists in adding limestone or ashes to water to create an alkaline solution which will change the pH and physical structure of the corn kernels.

It is one of the most important steps to obtain the necessary texture used to make the dough. Without it , we wouldn’t be able to make the tortillas we all love.
