About 200 guests attended the grand opening of the second local concept from internationally recognized chef Richard Sandoval on Saturday, March 26. Located in the newly opened Breathless Resort on the Cabo San Lucas Marina, La Biblioteca de Tequila is Sandoval’s second “Library of Tequila” operation, the first being in Denver, Colorado. A chef, restaurateur, author, and television personality, Sandoval specializes in contemporary Latin cuisine on a global basis with more than 40 restaurant locations. He has cross-cultural restaurants in Arizona, California, Colorado, Florida, Nevada, New York, Virginia, and Washington, D.C., as well as in Dubai, Hong Kong, Tokyo, Mexico, Qatar, and Serbia.

 la-biblioteca-de-tequilla-cabo-43421-r2Born in Mexico where he learned to appreciate the flavors of his homeland, Sandoval now calls Denver home; he has seven restaurants in that state. He opened Toro Restaurant in Cabo San Lucas in 2015. In addition to his many restaurant operations, he has developed menus for first-class passengers of American Airlines and many world leading hotels, as well as having written cookbooks and appeared as a celebrity chef on television.

 Sandoval, a former tennis player turned chef, has helped ace the food game at the U.S. Open Tennis Tournament in New York as a celebrity chef with his signature staples of specialty tacos including oyster tacos, crab guacamole and Maya chicken tinga. He combines authentic Latin with international flavors, ingredients and techniques to create new and unexpected concepts.  His winning smile has appeared on many national publications, and he has received an abundance of awards such as Mexico’s National Toque d’Oro. Richard Sandoval Restaurants (RSR), as a leading interest group, was named as one of the “25 Coolest Multi-Concept Companies” by Restaurant Hospitality.

La Biblioteca de Tequila boasts one of the largest collections of tequila, mezcals, and agave spirits in the world with more than 350 from which to choose, some aged seven days up to 25 years. Bottles align the walls, all categorized. Instead of checking out books in this “library,” you can check out bottles of tequila, store them in your personal locker to sip upon your return. His Latin American inspired dishes can be paired with cocktails while enjoying the high-energy, late-night lounge that is La Biblioteca de Tequila.—Sandra A. Berry
