Pollo a la Poblana
Chicken supreme filled with panela cheese, a fresh local cheese; and Huitlacoche, a Nahuatl word, refering to a black mushroom that grows on the corn, also called Mexican Truffle; covered with crispy panko and fried until golden. It is served with a Poblano pepper sauce and Mexican rice. Something New to give it a try.
