Los Cabos, Mexico, June 5, 2006 - - Esperanza, Auberge Resort's only international property, has just opened its third restaurant, TAPAS, featuring small plates and appetizers representing various regions of Mexico. Taking advantage of the best that Baja has to offer – a magical seaside, sun-drenched setting and abundant natural resources – TAPAS serves up a lighter fare for lunch or dinner in a casual outdoor setting located adjacent to the resort's spectacular new pool.
TAPAS' menu will feature sandwiches, burgers, salads, pastas and a variety of Mexican tapas as well as fresh seafood, sushi and ceviche bar. Chef Flynt Payne's menu features such regional dishes as Traditional Tomato Gazpacho with Celery Salsa; Scallop with Charred Poblano and Olive Ceviches; Atun Tun Tun and Cangrejito Piquin Sushi Rolls; Chile Barbecued Shrimp with Fennel; Grilled Filet of Beef Skewers with Coconut and Garlic; Habanero Honey Glazed Chicken Wings with Coconut; and a Grilled Angus Burger on Sesame Brioche, to name a few. TAPAS' lunch and dinner menus will rotate seasonally while maintaining a few signature dishes throughout the year.
