Imagine the comfort of the homey Mexican dishes complemented with the elegance and sophistication of the French twists, then think of Roberto Valle–– one of Cabo’s hottest chefs, add the tres chic decor and welcome to Voila.

After winding your way into this romantic setting, between flickering candles and a cozy fire pit experience the luxurious bill of fare in the air-conditioned 30-seat dining room or in the 20-seat backyard.

The amuse bouche changes daily. On the night we visited we were greeted with a crispy toast and a perfectly smooth spread of salami mousse.

The salads, like the rest of the dishes, are loaded with fresh organic ingredients, and come in half or full portions. The most colorful and delectable of all is the mix of grilled duck breast, caramelized apples and dried cranberries on a bed of organic greens, generously sprinkled with raspberry vinaigrette. The Camembert and gulf salads are great picks as well.

The seafood, steak and chicken entrees come with an array of fabulous French sauces, reductions and side veggies––the demi-glace reduction and the ratatouille Nicoise vegetable stew come to mind.

The signature dish is the Lobster Burrito with Manchego cheese, avocado, cabbage and mango chipotle salsa, while the pistachio and macadamia nut crusted halibut with habanero fumet is not to be missed. Try the grilled free range baby hen al Pipian with pumpkin seed mole sauce, served over achiote seasoned corn cake with a round stack on thin, cream-smeared baked potato slices. Salute to the handmade Huitlacoche (corn husk truffle) ravioli with a creamy tequila and corn sauce and a thousand blessings to the decadent desserts that follow.

Imagine the irresistible Kalhua almond flan with coffee caramel sauce or the equally delicious pistachio creme brulee with berries on a crispy caramel crust. On the dessert menu you’ll find a few more of the French additions like the raspberry coulis––a rich sauce made from pureed and strained fruits––that accompanies the ultimate Chocolate Bombe.

Valle’s food comes with a modest wine list and polished service. Every Friday night starting at 8 p.m. this romantic spot is filled with live jazz by the ever more popular Sexto Sentido.

Featuring French and Mexican tasting menus on Tuesdays and Sundays, Voila is located on Comonfort across from El Encanto Suites, inside Plaza Paulina.
