Photos of visiting artists and politicians collected during three generations of Alfredos are ubiquitous in the revamped dining room, showing laughter and long strings of spaghetti, while the impressive mural by Fidel Figueroa, inspired by an Italian artist Bernini and La Plaza Navona in Rome, graciously sets the scene for traditional Italian feast.
Chef Daniele Tonin plays up the pasta, fatte in casa (homemade) and utterly fresh with almost twenty variations to choose from. Let it be tortellini, ravioli, tagliatelle or gnocchi, and don’t forget the house specialtythe world-famous creamy Maestosissime Fettuccine All’Alfredo, served traditionally at your table, based on the 1914 authentic recipe, and lending the name to this excellent establishment.
Among the new antipasti are Prosciutto San Danielle with celery and Gorgonzola cheese, as well as the cream of mushroom with crispy croutons and fine herbs. The selection of fish and meat entrees doubled and the brand-new options include delicacies such as swordfish in lemon sauce and beef filet with two polentas, grilled mushrooms and artichokes.
Accompanying these fine dishes is an international wine list featuring vintages from California, France, Italy, Mexico, Argentina, and Chile.
Excellent food, wine and traditional Italian live music were all part of the opening celebration on Sept. 22, which began with ribbon cutting by José Manuel González Arreola, Director of Los Cabos Tourist Board, Francisco Vilchis, President of CANACO, and Roberto Padilla, President of Los Cabos Concierge Association.
The event was hosted by Michael Oney, General Manager of Presidente InterContinental Resort Los Cabos, who spoke of the history of the three generations of Alfredo Di Roma and introduced the new Director of Food and Beverages of the hotel Stephan Coudon, along with other, new and current staff members.
The hotel chain Presidente InterContinental has decided to turn all their Da Antonio restaurants into Alfredo di Roma. The Los Cabos venture joins the already existing restaurants in Mexico City, Guadalajara, Cancún, Cozumel, Pachuca, and Puerto Vallarta, as well as the international locations in Rome, Orlando, Río de Janeiro, and New York.
