Home to one of the Los Cabos area's most original fusion concepts, Templo Restaurant in Cabo San Lucas mixes Asian, Mexican and South American flavors and cooking techniques with surprising and delicious results. The disparate influences aren't random, or premised on previous attempts at such a disparate fusion, but rather reflect the cosmopolitan heritage and peripatetic career of co-owner and executive Chef Mariano Takinami.

Born in Argentina to an Argentine mother and Japanese father, Takinami married a Brazilian amid cooking stints in other far-flung locales like Peru and México (his first years in Los Cabos were as a chef for the Villa Group from 2007 – 2009). This unique heritage and life experience ultimately found expression at Templo in what the chef describes as a “grill, wok, and bar.”

The grill is multi-level so Takinami and his onsite chef can cook and cure beef in the South American fashion. The wok, a traditional Chinese cooking vessel, is used to prepare more Asian focused dishes. And the restaurant serves a rather extensive list of international wines, top-shelf liquors and cocktails created by the bar manager.

kitchen, dishes, food, Opened in 2014 on the former site of La Fonda, Templo has been successful from the start, although like many local businesses, it suffered setbacks during Hurricane Odile, the Category 4 monster storm that ravaged the region on September 14 – 15 of that year. A second location–in San José del Cabo's historic Art District–is expected to open in March 2016, with additional expansion in the planning stages.

Templo–the name (Temple in English) is not meant in any religious sense, but rather as a place that welcomes everyone–is open nightly in Cabo San Lucas from 3 p.m. to 12 a.m., although the closing time is actually rather open-ended. The kitchen closes at midnight, but diners are welcome to stay as late as they like before leaving. This casual approach is a big part of the restaurant's success with locals, some of whom have their own wine collections stored onsite (Templo has a per bottle corkage fee of $290 pesos).

The atmosphere and décor, too, are relatively straightforward. Yes, Templo has rather chic appointments, from a marble firepit in the shape of a T, to ceiling-hung lamps in a variety of shapes and sizes. But the restaurant avoids excessive ornamentation. There are no table linens, no candles, no flowers; all dishes are served on plain white plates. Takinami doesn't want the décor to distract from the food, the unique fusion cuisine that has been Templo's calling card from the very beginning.
