{"id":8718,"date":"2015-10-26T14:03:08","date_gmt":"2015-10-26T20:03:08","guid":{"rendered":"http:\/\/www.loscabosguide.com\/blog\/?p=8718"},"modified":"2015-10-26T14:04:23","modified_gmt":"2015-10-26T20:04:23","slug":"baja-smoked-tuna","status":"publish","type":"post","link":"https:\/\/www.loscabosguide.com\/blog\/2015\/10\/baja-smoked-tuna\/","title":{"rendered":"Baja Smoked Tuna"},"content":{"rendered":"<p><strong>From The Admirals Kitchen<\/strong><br \/>\n<strong> JC,s Baja Smoked Tuna Dip.Yum!!!!<\/strong><\/p>\n<p>Ingredients Nutrition<\/p>\n<p>Servings 6-8 Yield 1 1\/2 cups Units US<\/p>\n<p>&#8211; 1 (5 ounce) can <a href=\"http:\/\/www.food.com\/about\/tuna-395\">Yellowfin tuna<\/a>, drained well<br \/>\n&#8211; 1 (8 ounce) package <a href=\"http:\/\/www.food.com\/about\/cream-cheese-506\">cream cheese<\/a>, softened slightly*<br \/>\n&#8211; 1 1\u20442 teaspoons liquid <a href=\"http:\/\/www.food.com\/about\/smoke-seasoning-58\">smoke<\/a><br \/>\n&#8211; 1 teaspoon <a href=\"http:\/\/www.food.com\/about\/worcestershire-sauce-176\">Worcestershire sauce<\/a><br \/>\n&#8211; 1\u20442 teaspoon <a href=\"http:\/\/www.food.com\/about\/garlic-powder-501\">garlic powder<\/a><br \/>\n&#8211; 1\u20442 teaspoon <a href=\"http:\/\/www.food.com\/about\/salt-359\">salt<\/a><br \/>\n&#8211; 1 dash pepper sauce (like Tabasco)<br \/>\n&#8211; 1\u20442 teaspoon <a href=\"http:\/\/www.food.com\/about\/paprika-335\">paprika<\/a><\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>1. Blend all ingredients together well using a stand mixer or hand mixer. Taste, and adjust seasonings to your liking. Be careful adding more liquid smoke, a little goes a long way! When ready to serve, try adding a light sprinkling of paprika over the top for decoration.<\/p>\n<p><strong>JC,s Baja Smoked Tuna Bruschetta!!<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>8 ounces sliced tuna<br \/>\nSalt<br \/>\nFreshly ground black pepper<br \/>\n4 tablespoons cream cheese, room temperature<br \/>\n2 tablespoons unsalted, room temperature butter<br \/>\n1 tablespoon thinly sliced green onions<br \/>\n1 tablespoon minced shallots<br \/>\n1 tablespoon chopped fresh parsley leaves<br \/>\n2 tablespoons heavy cream<br \/>\nCrisped slices French bread or crackers, for serving<br \/>\nThinly sliced green onions or chopped parsley leaves, for serving<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>2 tablespoons mesquite wood smoking chips<\/p>\n<p>Season the tuna with the salt and pepper, and place the wood chips in the bottom of a stovetop smoker and position the drip tray and wire rack over the top according to the manufacturer&#8217;s instructions. Lightly oil the wire rack, then place the tuna slices on the rack and position the lid over the top of the smoker, leaving slightly ajar. Place the smoker over high heat until smoke begins to exit the smoker. Reposition the lid so that the smoker is completely covered and lower the heat to medium. Cook the tuna until just cooked through, about 8 minutes. Chop the tuna into 1-inch pieces and place in a food processor with the cream cheese, butter, green onions, shallots and parsley. Process until a very smooth paste, stopping to scrape down the sides of the bowl as necessary. Add the heavy cream and pulse until just combined. Transfer spread to a small serving bowl and serve the spread with crisped bread or spread on crackers, garnished with green onions or parsley, as desired.<\/p>\n<p><strong>JC,s Bisbee Texas-Two Step Drink Inside!<\/strong><\/p>\n<p><strong><strong>Ingredients<\/strong><br \/>\n<\/strong>5 oz Fresh lemon juice<br \/>\n5 tsp\u00a0Superfine sugar<br \/>\n2 oz\u00a0<a href=\"http:\/\/liquor.com\/brands\/partida-tequila\">Partida Reposado Tequila<\/a><br \/>\n5 oz\u00a0<a href=\"http:\/\/liquor.com\/brands\/grand-marnier\">Grand Marnier <\/a><br \/>\nClub soda<\/p>\n<p><span style=\"line-height: 1.5;\"><strong>Directions<\/strong><br \/>\nIn a shaker, stir together the lemon juice and sugar. Add the tequila and Grand Marnier, and fill with ice. Shake well and strain into a chilled cocktail glass.Top with a small splash of club soda.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong>BEWARE:<\/strong> Remember if your not renting charter boats from companies who have been established in Cabo for the past 20 years ( Jc sport Fishing, Pisces Sport Fishing, Minervas, Redrum, Picante Fleet) you might have problems. They don&#8217;t even have an office you can go and confirm your charter boat. You do not want to spend a day walking around looking for the boat and where you board. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You dont want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in next weeks fishing report.
