{"id":8604,"date":"2015-10-10T13:07:16","date_gmt":"2015-10-10T19:07:16","guid":{"rendered":"http:\/\/www.loscabosguide.com\/blog\/?p=8604"},"modified":"2015-10-10T13:07:16","modified_gmt":"2015-10-10T19:07:16","slug":"jcs-baja-tuna-salad-recipe","status":"publish","type":"post","link":"https:\/\/www.loscabosguide.com\/blog\/2015\/10\/jcs-baja-tuna-salad-recipe\/","title":{"rendered":"JC,s Baja Tuna Salad Recipe!!"},"content":{"rendered":"<p style=\"text-align: center;\"><strong>From The Admirals Kitchen!<\/strong><br \/>\n<strong> JC,s Baja Tuna Salad Recipe!!!<\/strong><br \/>\n<strong> Tuna Salad with Fresh Tuna<\/strong><\/p>\n<p>Makes about 2 cups of salad<br \/>\n2 5-ounce cans water-packed tuna fish<br \/>\n2 to 4 tablespoons mayonnaise<br \/>\n1 rib celery, diced small<br \/>\n1 small shallot or 1\/4 red onion, diced small<br \/>\n1 tablespoon lemon juice (from 1\/2 lemon)<br \/>\n1 tablespoon pickle relish, optional<br \/>\nSalt and pepper<br \/>\nAdd 2 tablespoons of mayonnaise, celery, shallot, lemon juice, pickle relish (if using), a sprinkle of salt, and a few cracks of fresh black pepper to the tuna fish. Stir with a fork to combine, breaking up any large chunks of tuna fish as you go. Add more mayo if you&#8217;d like smoother, creamier tuna salad. Taste and add more of any of the ingredients to taste.<br \/>\nUse immediately or store in a covered container in the refrigerator for up to a week.<br \/>\n<strong>Tuna Salad Variations<\/strong><br \/>\n\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Use yogurt instead of mayo for a lighter salad.<br \/>\n\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Use extra-virgin olive oil instead of mayo for a looser salad.<br \/>\n\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Use canned salmon, smoked trout, or leftover chicken in place of the tuna.<br \/>\n\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add diced apples, raisins, or dried fruit to the basic recipe.<br \/>\n\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add diced fennel, shredded cabbage, diced cucumbers, or any other crunchy vegetable.<br \/>\n\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add a dash of curry powder, dukkah, harissa, chopped fresh herbs, or any other spice mix in your cupboard.<br \/>\n\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Tuna and mayo \u2014 it&#8217;s as simple as you can get, and a perfectly acceptable lunch.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><strong>JC,s Baja Tuna Linguine!!<\/strong><br \/>\nMarinating tuna and chopped tomatoes in wine, lemon zest and olive oil for an hour makes a fresh, simple pasta sauce.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2 tablespoons pine nuts<\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 pound tuna steak, cut into 1\/2-inch dice<\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1\/2 cup dry white wine<\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1\/2 teaspoon finely grated lemon zest<\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1\/2 pound cherry tomatoes, coarsely chopped<\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 cup extra-virgin olive oil<\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 cup coarsely chopped fennel fronds<\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1\/2 teaspoon crushed red pepper<\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 pound linguine<\/p>\n<p>\u00b7\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Salt and freshly ground pepper<\/p>\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n<p>1.\u00a0\u00a0\u00a0\u00a0\u00a0 In a small skillet, toast the pine nuts over moderate heat until lightly browned, about 2 minutes. Transfer to a medium bowl. Add the tuna, wine and lemon zest, 1\/2 cup of the cherry tomatoes and 2 tablespoons each of the olive oil and fennel fronds. Cover and refrigerate for 1 hour.<\/p>\n<p>2.\u00a0\u00a0\u00a0\u00a0\u00a0 Heat the remaining 2 tablespoons of olive oil in a large, deep skillet. Add the crushed red pepper and the remaining cherry tomatoes and cook over low heat, stirring occasionally, until the sauce is flavorful, about 10 minutes.<\/p>\n<p>3.\u00a0\u00a0\u00a0\u00a0\u00a0 Meanwhile, cook the linguine in boiling salted water until al dente. Reserve 1\/4 cup of the pasta cooking water, then drain the linguine.<\/p>\n<p>4.\u00a0\u00a0\u00a0\u00a0\u00a0 Add the tuna mixture and the remaining 2 tablespoons of fennel fronds to the skillet and cook over low heat, stirring just until the tuna starts to whiten, about 1 1\/2 minutes. Remove the skillet from the heat. Add the linguine and the reserved pasta cooking water and toss well. Season with salt and pepper and serve at once.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><strong>JC,s Baja Mama Mama Cocktail !!<\/strong><\/p>\n<p>Bahama Mama<br \/>\n(makes 1)<br \/>\n1\/2 ounce dark rum<br \/>\n1\/2 ounce light rum<br \/>\n1\/2 ounce 151-proof rum<br \/>\n1\/2 ounce Kahl\u00faa<br \/>\n1 ounce fresh lemon juice<br \/>\n3 ounces unsweetened pineapple juice<br \/>\nWedge of pineapple or slice of orange and a maraschino cherry<br \/>\nShake the rums, Kahl\u00faa, lemon juice, and pineapple juice with ice then strain over crushed ice into a chilled glass. Garnish with a pineapple wedge or orange slice and a maraschino cherry.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>BEWARE:<\/strong> Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don&#8217;t want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
