{"id":8493,"date":"2015-09-21T12:00:12","date_gmt":"2015-09-21T18:00:12","guid":{"rendered":"http:\/\/www.loscabosguide.com\/blog\/?p=8493"},"modified":"2015-09-21T12:00:12","modified_gmt":"2015-09-21T18:00:12","slug":"jcs-baja-seared-scallops","status":"publish","type":"post","link":"https:\/\/www.loscabosguide.com\/blog\/2015\/09\/jcs-baja-seared-scallops\/","title":{"rendered":"JC,s Baja Seared Scallops!!"},"content":{"rendered":"<p style=\"text-align: left;\"><strong>From The Admirals Kitchen!<\/strong><br \/>\n<strong>JC,s Baja Seared Scallops!!<br \/>\n<\/strong><br \/>\n<strong>Ingredients<\/strong><br \/>\n\u0080\u00a0\u00a0 \u00a01 to 1 1\/4 pounds dry sea scallops, approximately 16<br \/>\n\u0080\u00a0\u00a0 \u00a02 teaspoons unsalted butter<br \/>\n\u0080\u00a0\u00a0 \u00a02 teaspoons olive oil<br \/>\n\u0080\u00a0\u00a0 \u00a0Kosher salt<br \/>\n\u0080\u00a0\u00a0 \u00a0Freshly ground black pepper<br \/>\n<strong>Directions<\/strong><br \/>\nRemove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.<br \/>\nAdd the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1\/2 minutes on each side. The scallops should have a 1\/4-inch golden crust on each side while still being translucent in the center. Serve immediately.<\/p>\n<p style=\"text-align: left;\"><strong>JC,s Baja Grilled Scallops!!<\/strong><br \/>\n<strong>Ingredients<\/strong><br \/>\n\u0080\u00a0\u00a0 \u00a020 to 25 large scallops (about 3 pounds)<br \/>\n\u0080\u00a0\u00a0 \u00a05 tablespoons olive oil<br \/>\n\u0080\u00a0\u00a0 \u00a01 teaspoon salt<br \/>\n\u0080\u00a0\u00a0 \u00a01 teaspoon black pepper<br \/>\n\u0080\u00a0\u00a0 \u00a01 1\/2 tablespoons lemon pepper<br \/>\n<strong>Directions<\/strong><br \/>\nPat dry each scallop and lay them on a tray. Sprinkle on some olive oil, coating scallops on all sides. Season the scallops with salt, black pepper, and lemon pepper, making sure that the seasoning covers all sides. Refrigerate until ready to cook. Grill for about 2 to 3 minutes on each side. Serve immediately.<\/p>\n<p style=\"text-align: left;\"><strong>JC,s Baja Tropical Rum Punch!!<\/strong><br \/>\n<strong>Ingredients<\/strong><br \/>\n\u0080\u00a0\u00a0 \u00a01 1\/3 cups gold rum<br \/>\n\u0080\u00a0\u00a0 \u00a01 1\/3 cups frozen passion-fruit-flavored juice cocktail concentrate, thawed<br \/>\n\u0080\u00a0\u00a0 \u00a01 cup mango nectar<br \/>\n\u0080\u00a0\u00a0 \u00a01 cup guava nectar<br \/>\n\u0080\u00a0\u00a0 \u00a02 tablespoons (or more) fresh lime juice<br \/>\n\u0080\u00a0\u00a0 \u00a04 cups ice cubes<br \/>\n\u0080\u00a0\u00a0 \u00a06 fresh pineapple wedges<br \/>\n<strong>Preparation<\/strong><br \/>\nMix gold rum, passion-fruit concentrate, mango nectar, guava nectar, and 2 tablespoons lime juice in pitcher. Taste, adding more lime juice, if desired. Add ice cubes and stir well to blend. Pour punch into 6 glasses. Garnish with fresh pineapple wedges and serve.<\/p>\n<p><strong>BEWARE:<\/strong> Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don&#8217;t want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license.
