Not only does this make for easier fish cleaning, but the scales keep the fish from drying out while on the grill. Fish cooked this way consistently result in juicy, moist fillets.<\/p>\n<p style=\"text-align: left;\"><strong>Ingredients<\/strong><br \/>\n4 tablespoons melted butter<br \/>\n3 cloves minced garlic<br \/>\n1 tablespoon finely grated Parmesan<br \/>\n1 tablespoon Essence, recipe follows<br \/>\n4 tablespoons olive oil<br \/>\n1 (3 1\/2 to 4 pound) grouper, fillets removed with scales intact<br \/>\n1\/4 cup finely chopped fresh herbs, such as tarragon, thyme, basil or chives<br \/>\nArugula and Orange Salad, recipe follows<\/p>\n<p><strong>Jc,s Baja Seasoning):<\/strong><br \/>\n2 1\/2 tablespoons paprika<br \/>\n2 tablespoons salt<br \/>\n2 tablespoons garlic powder<br \/>\n1 tablespoon black pepper<br \/>\n1 tablespoon onion powder<br \/>\n1 tablespoon cayenne pepper<br \/>\n1 tablespoon dried leaf oregano<br \/>\n1 tablespoon dried thyme<br \/>\nSalad:<br \/>\n2 cups arugula, cleaned<br \/>\n2 cups baby spinach, cleaned<br \/>\n1\/2 red onion, sliced thinly<br \/>\n1 orange, supremed<br \/>\n2 tablespoons Dijon mustard<br \/>\n1\/4 cup orange juice<br \/>\n1 tablespoon white wine vinegar<\/p>\n<p style=\"text-align: left;\"><strong>Directions<\/strong><br \/>\nPreheat the grill to medium-high.<br \/>\nIn a small bowl combine the butter, garlic, Parmesan, Essence, and olive oil and whisk to combine.<br \/>\nLay the fillets on the grill, scale side down, and brush generously with the melted butter mixture. Close the grill cover and cook for 3 minutes. Open and brush again with the melted butter mixture. Repeat this process until the flesh is firm and opaque, for a total cooking time of about 12 to 15 minutes for this size fish. The last minute of cooking time, sprinkle with the fresh herbs. Remove from the grill and serve immediately with Arugula and Orange Salad.<br \/>\nCombine all ingredients thoroughly and store in an airtight jar or container.<br \/>\nYield: about 2\/3 cup<br \/>\n<strong>Salad:<\/strong> In a large salad bowl, combine the arugula, spinach, red onion, and orange segments.<br \/>\nIn a small bowl, whisk together the mustard, orange juice, and vinegar. While whisking, slowly drizzle in the oil. Whisk until emulsified and season with salt and pepper.<\/p>\n<p style=\"text-align: center;\"><strong>JC,s Grouper Fingers with Tartar Sauce!!<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>Ingredients<\/strong><br \/>\nVegetable oil, for frying<br \/>\n1 1\/2 cups all-purpose flour<br \/>\n1\/3 cup cornstarch<br \/>\n1 1\/2 teaspoons dried dill<br \/>\n1 teaspoon salt<br \/>\n1\/3 teaspoon ground mustard<br \/>\n1 1\/4 cups buttermilk<br \/>\n4 grouper fillets, cut into 2-inch strips (about 1 1\/2 pounds)<br \/>\nYummy Sauce, recipe follows<br \/>\nYummy Sauce:<br \/>\n1\/2 cup mayonnaise<br \/>\n1\/2 cup grated onion<br \/>\n1\/2 cup dill relish<br \/>\n1\/2 teaspoon dried dill<br \/>\nSqueeze lemon juice<\/p>\n<p><strong>Directions<\/strong><br \/>\nIn a large Dutch oven, pour the oil to a depth of 3 inches; heat the oil until a thermometer reads 350 degrees F.<br \/>\nIn a shallow dish, combine the flour, cornstarch, dill, salt and mustard.<br \/>\nIn a separate shallow dish, pour in the buttermilk. Dredge the grouper strips in the flour mixture. Dip in the buttermilk, and dredge in the flour mixture again to coat.<br \/>\nFry the grouper fingers, in batches, until golden brown, 4 to 5 minutes. Drain on some paper towels. Serve immediately with the Yummy Sauce.<br \/>\nYummy Sauce:<br \/>\nIn a small bowl, combine the mayonnaise, onions, relish and dill. Season with lemon juice, salt and pepper. Cover and chill. Yield: 1 cup.<\/p>\n<p style=\"text-align: left;\"><strong>BEWARE:<\/strong> Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don&#8217;t want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license.
