{"id":6766,"date":"2015-02-23T12:54:28","date_gmt":"2015-02-23T19:54:28","guid":{"rendered":"http:\/\/www.loscabosguide.com\/blog\/?p=6766"},"modified":"2015-02-23T12:54:28","modified_gmt":"2015-02-23T19:54:28","slug":"jcs-baja-garlic-shrimp","status":"publish","type":"post","link":"https:\/\/www.loscabosguide.com\/blog\/2015\/02\/jcs-baja-garlic-shrimp\/","title":{"rendered":"JC,s Baja Garlic Shrimp!!"},"content":{"rendered":"<p style=\"text-align: center;\"><strong>From The Admirals Kitchen is Open Again!!<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>JC,s Baja Garlic Shrimp!!<\/strong><\/p>\n<p><strong>Yield: 4 servings<\/strong><br \/>\n<strong>Ingredients<\/strong><\/p>\n<p>2 tablespoons butter<br \/>\n1 pound medium shrimp, peeled and deveined, tail on<br \/>\nSalt and freshly ground black pepper<br \/>\n1\/4 cup minced onion<br \/>\n8 garlic cloves, minced<br \/>\n3 tablespoons white wine<br \/>\n1 tablespoon fresh lime juice<br \/>\n2 tablespoons chopped fresh parsley leaves<\/p>\n<p><strong>Directions<\/strong><br \/>\nMelt the butter in heavy medium skillet over medium heat. Season the shrimp with salt and pepper, to taste. Cook for about 4 minutes until almost fully cooked. Using a slotted spoon, transfer the shrimp to a plate and tent it with foil. Add the onion and garlic and cook until the onion is translucent, about 6 minutes. Stir in the wine and bring to boil, scraping up the brown bits on the bottom of the pan. Boil for 1 minute. Stir in the lime juice and parsley. Return the shrimp to the pan and toss to coat with sauce and Continue to cook until the shrimp are fully cooked, about 1 minutes. Season with salt and pepper, to taste. Jc Baja Spices blend adds impeccable flavor to this tasty, simple seafood salad recipe.<br \/>\n<strong>Ingredients<\/strong><\/p>\n<p>1 pound jumbo shrimp (about 8 pieces)<br \/>\n1 tbsp Jc Baja Spice Blend<br \/>\n1\u017d4 cup plus 1 tbsp EVOO (extra virgin olive oil)<br \/>\n6 cups spring lettuce mix<br \/>\n1 star fruit, sliced<br \/>\n1 papaya, cubed<br \/>\n1 small red onion, sliced<br \/>\n1 Anaheim pepper, sliced into rounds<br \/>\n1 cup cherry tomatoes<br \/>\n1\u017d4 tsp salt<br \/>\n3 tbsp lemon juice (about 1 large lemon)<br \/>\n1\u017d2 tsp Tabasco brand Green Pepper Sauc<\/p>\n<p><strong>Directions<\/strong><br \/>\nIn a medium bowl, whisk the Jc Baja Spice Blend, 1 tablespoon EVOO, and 2 tbsp lemon juice together. Add the shrimp and toss to cover. Refrigerate for 1\u017d2 hour.<br \/>\nHeat the grill.<br \/>\nIn the meantime, toss the lettuce mix with the fruits, pepper, onion, and tomatoes.<br \/>\nMake the dressing by whisking together 1\u017d4 cup EVOO, 1 tbsp lemon juice, 1\u017d4 tsp salt, and the Green Pepper Sauce.<br \/>\nIf you have an open bottom grill pan, grill the shrimp over medium heat until cooked through. Otherwise, thread shrimp on skewers and grill over medium flame until cooked through.
