Hey Hey!<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Yellow Tomato-Chipotle Salsa: 2 limes, zested and juiced 1 tablespoon<br \/>\nchopped chipotle in adobo puree 2 teaspoons honey 1\/4 cup extra-virgin<br \/>\nolive oil 3 yellow tomatoes, halved, seeded and diced 1\/2 small red onion,<br \/>\nthinly sliced 1\/4 cup chopped fresh cilantro leaves, plus more for garnish<br \/>\nSalt and freshly ground black pepper Lobster Taco:<\/p>\n<p>2 1\/2 pound lobster, parboiled and split in 1\/2 lengthwise Canola oil Salt<br \/>\nand freshly ground black pepper 3 green onions (dark and pale green part)<br \/>\nthinly sliced 8 (6-inch) corn tortillas (wrapped in foil and warmed) 1 1\/2<br \/>\ncups shredded Monterey Jack cheese\u00a0 Directions<\/p>\n<p>Salsa: Whisk together the lime zest and juice, chipotle, honey and olive<br \/>\noil in a medium bowl. Add the tomatoes, onion and cilantro and mix until<br \/>\ncombined. Season with salt and pepper, to taste. Taco: Heat grill to high.<br \/>\nBrush the lobster flesh with some of the canola oil and season with salt<br \/>\nand pepper, to taste. Put on the grill, flesh side down, and grill until<br \/>\nslightly charred and just cooked through, about 5 minutes. Remove the meat<br \/>\nfrom the shell and coarsely chop. Put the chopped lobster into a bowl,<br \/>\nalong with the green onions and mix to combine. Put the tortillas on a flat<br \/>\nsurface and evenly divide the cheese over the surface. Put a few heaping<br \/>\ntablespoons of the lobster in the center. Fold the tortillas over, brush<br \/>\nthe tops with oil and grill, oil side down, until slightly charred, about 1<br \/>\nminute. Brush the top side of the tortillas with oil, flip over and<br \/>\ncontinue grilling until slightly charred and cheese just melts. Arrange the<br \/>\ntortillas on a serving platter and garnish with cilantro.<\/p>\n<p><strong>Grilled Lobster! Yup!<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Lemon-Red Fresno Butter: 1 1\/2 cups freshly squeezed lemon juice 1<br \/>\nteaspoon clover honey 2 sticks unsalted butter, softened 2 teaspoons finely<br \/>\ngrated lemon zest 3 red Fresno chiles, grilled, seeded and finely diced<br \/>\nKosher salt and freshly grounded black pepper Grilled Lobster Tails: Kosher<br \/>\nsalt 8 jumbo Maine lobster tails (8 to 10 ounces each) Canola oil, for<br \/>\nbrushing Freshly ground black pepper Fresh cilantro leaves, for garnish<br \/>\nLemon zest, for garnish<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>For the lemon-red Fresno butter: Put the lemon juice in a small saucepan<br \/>\nand bring to a boil over high heat. Cook until reduced to 1\/4 cup. Stir in<br \/>\nthe honey. Let cool. Add the butter and zest to the reduced lemon juice and<br \/>\nmix until smooth. Fold in the chiles and season with salt and pepper. The<br \/>\nbutter will keep in the refrigerator, covered, for up to 1 week. For the<br \/>\ngrilled lobster tails: Bring a large pot of salted water to a boil. Add the<br \/>\nlobster tails and boil for 4 minutes. Remove and drain well. Split each<br \/>\nlobster tail lengthwise down the underside with a heavy knife, taking care<br \/>\nnot to cut through the back shell, so that the lobster is still in one<br \/>\npiece but the inside is exposed. Heat a charcoal grill to medium-high heat.<br \/>\nBrush the lobster flesh with oil and sprinkle with salt and pepper. Place<br \/>\nthe tails flesh-side down on the grill and grill until slightly charred,<br \/>\nabout 3 minutes. Flip over, brush with a generous amount of lemon-red<br \/>\nFresno butter, and continue grilling until just cooked through, 2 to 3<br \/>\nminutes, brushing with butter throughout. Remove from the grill to a<br \/>\nplatter, flesh-side up. Top with a little more butter, some cilantro leaves<br \/>\nand lemon zest.<\/p>\n<p><strong>BEWARE:<\/strong> Please beware of the guys in the street selling boat charters. If<br \/>\nyou wait till the day you are fishing and go to the dock where your boat is<br \/>\nmany times people will mislead you to another boat or dock trying to put<br \/>\nyou on a boat that was not meant for you. You need to have a person guide<br \/>\nyou to your boat, who is from a reputable charter company. This way there<br \/>\nis no confusion or misleading. Please remember when renting Sport fishing<br \/>\nboats in Cabo that you rent your boat from reputable and established<br \/>\nbusiness. Walk into a fishing fleet office and ask questions about what you<br \/>\nare getting and what are the costs? You don&#8217;t* *want to rent boats from<br \/>\nvendors in the streets and you do not want to book through shady websites<br \/>\noffering you the world. Check through travel forums about reputable fishing<br \/>\nfleets to deal with. Look for testimonials about the fleet your booking,<br \/>\nyour charter with. Ask about what will the boat be supplying? Will it<br \/>\ninclude beverages or lunches? How much does it cost to fillet your catch?<br \/>\nCheck to see if charter boat is insured? Ask about getting your catch<br \/>\nsmoked? Check cost of a fishing license. These are just a few things to<br \/>\nconsider when booking your charter boat.
