As with all of the items on the Nick-San menu, these creations combine their passion for using traditional techniques and locally sourced products.<\/p>\n<p>Most recently, chef Carbajal collaborated with special guest Dieter Koschina, an Austrian chef who has been awarded with two Michelin stars for his restaurant, Vila Joya in Portugal. He is considered among the world\u2019s best chefs, and his restaurant ranks 22 out of the top 50.<\/p>\n<p>Chef Koschina and his sous chef Matteo Ferrantino were in Los Cabos for the <strong>2014 Sabor a Cabo food and wine festival,<\/strong> during which several restaurants invited guest chefs to cook along with local talent. In this instance, Nick-San chef Carbajal partnered with chef Koschina for a special night.<\/p>\n<p>The two chefs prepared a menu with local seafood as well as ingredients that fuse Asian and Mediterranean flavors and styles.<\/p>\n<p>Delightful combinations included Champagne soup with fresh oysters and caviar, a succulent lamb with red bell peppers and goat cheese, pork belly with citrus, and locally caught tuna perfectly married with ginger, radish, and avocado.<\/p>\n<p>This perfect night also included delicious wines and prestigious Champagnes, like Louis Roederer Brut and the Prestige Ros\u00e9 de Taittinger. They were perfectly paired with all the dishes and desserts as well as great company and ambience.<\/p>\n<p>Don&#8217;t miss the new creations that are now appearing on the Nick-San menu and continue
