{"id":4975,"date":"2014-08-31T09:55:09","date_gmt":"2014-08-31T15:55:09","guid":{"rendered":"http:\/\/www.loscabosguide.com\/blog\/?p=4975"},"modified":"2014-09-01T09:57:57","modified_gmt":"2014-09-01T15:57:57","slug":"from-the-admirals-kitchen-pan-fried-needlefish","status":"publish","type":"post","link":"https:\/\/www.loscabosguide.com\/blog\/2014\/08\/from-the-admirals-kitchen-pan-fried-needlefish\/","title":{"rendered":"From The Admirals Kitchen &#8211; Pan Fried Needlefish"},"content":{"rendered":"<h3 style=\"text-align: center;\"><strong>For something new and different!<\/strong><\/h3>\n<p>4 large needlefish<br \/>\n1\/8 tsp. salt and pepper<br \/>\n1\/8 tsp. garlic powder<br \/>\n2 cups flour<br \/>\n1 cup corn meal<br \/>\n1 cup milk<br \/>\n1 egg<br \/>\noil for frying<\/p>\n<p>Clean needlefish by scaling, removing guts, and taking off head.<\/p>\n<p>Cut into 4 inch pieces and place in bowl in which the whisked egg<br \/>\nand milk have been placed.\u00a0 Sprinkle some\u00a0 of the salt, pepper, and<br \/>\ngarlic powder in with the fish.\u00a0 Heat oil to 350\u00b0F.\u00a0 Mix flour and<br \/>\ncornmeal together with rest of salt, pepper, and garlic powder.<br \/>\nPlace needlefish in flour\u00a0mixture and roll to coat, let sit in mix for a<br \/>\nfew minutes.\u00a0 Fry until golden brown.\u00a0 Bones will be green!\u00a0 No<br \/>\nharm, just a phosphate of iron.<br \/>\nThey are good.<\/p>\n<p><strong>Needle Fish Information!!!<\/strong><\/p>\n<p>The Keeltail Needlefish, <em>Platybelone argalus,<\/em> whose common Spanish name is Aguj\u00f3n de Quilla is a member of the <a href=\"http:\/\/www.mexfish.com\/mexico\/needlefish-family\/\">Needlefish or Belonidae Family<\/a>, known collectively as \u201caguj\u00f3nes\u201d in Mexico.<\/p>\n<p>The Keeltail Needlefish is one of the more exotic and unique fishes of Mexico and has an extremely elongated cylindrical body that is greenish blue on the upper back that abruptly transitions to silvery well above mid-body. They have very long beaks (25-27% of standard length) and the lower jaw is significantly longer than the upper jaw, and they have small teeth. The tail base is flattened with a large lateral keel, for which it is named, that is at least three times wider than it is deep. The caudal fin is slightly forked and the lower lobe is slightly larger than the upper lobe. The pectoral fins and pelvic fins are short.<\/p>\n<p>The Keeltail Needlefish is an oceanic pelagic found in the first fifteen feet of the water column. They reach a maximum length of 50 cm (19.7 inches). The Keeltail Needlefish are found from San Quintin to Cabo San Lucas along the west coast of Baja, in the southern half of the Sea of Cortez, and along the coast of the mainland from Acapulco south to Guatemala.
