CHILI FLAKED DUCK BREAST
Exotic greens with citrus, mango and chili flaked duck breast (4pax)
- 400g 2 medium duck breast
- 350g 1 mango
- 1 grape fruit ruby red
- 1 lime
- 1pza frise
- 1pza lolla rosa
- 1pza mache
- 2pza green onion
MARINADE (mix all together)
- 2 spoon peanut or soy bean oil
- 3 spoon soy sauce dark
- 2 spoon soy sauce lite
- 1 lime juice
- 1/4 spoon crusted szechwan, pepper & salt
FOR THE SWEET AND SPICY SAUCE (mix all together)
- 1 spoon chili garlic sauce
- 8 spoon rice vinegar
- 1/4 water
- 400g sugar
- 1/4 spoon salt
SALAD DRESSING (mix all together)
- 1/4 lime-juice
- 1spoon honey
- 1/4 spoon Szechwan pepper
- 1/4 spoon black pepper crushed
- 1/4 spoon chili garlic sauce
- 5 spoon of soy bean oil, mint leaves, coriander leaves
- Salt to taste
Take duck breast and marinate for about 30minutes. Pad dry and grill 5 minutes each side basting duck with remaining marinated. Set inside and let cool.
Take lettuce and wash carefully
Take grapefruit, cut into fillets
Take mango, peel it and slice into big stripes
Take green onion and slice into small rings
To arrange salad on a plate
Take duck breast and slice in 10 slices each arrange 5 slices (flan) on plate and arrange lettuces, and the fruit around it.
Sprinkle lettuce and fruit with dressing, duck meat with sweet and hot sauce. Over the duck breast sprinkle the sliced green onions, over the whole plate sprinkle the mint and coriander leaves
