HEADLINES: March 20, 2017
Chris, the so called best friend of JC,s has provided us with a list of some of JC,s so called accomplishments and we are a little over whelmed and suspicious about some of these claims, but we are going to print this to keep the record straight and we are holding CHRIS in contempt if we find any of this material to be false. Chris seems to do or say anything JC tells him to do and we suspect Chris is JC,s number one LACKY. Here are the claims below folks and we ask you to hold on to your DROORS?

JC, the so called Admiral, has made these claims over the years : I am a Chef, Guru, Sprititual Adviser, God of Gods, 2 Time Ellen DeGeneres “Dance off Winner”, Friend of Cal Worthington, Placed 2nd Behind “Gene, Gene the Dancing Machine” in Gong Show Auditions, Author, Presidential Candidate, Marlin Magazine Man of the Year, Played “Boots” in the Hit T.V. Show Petty Coat Junction, The Only Man Physically Thrown off  the Dr. Phil Show by Dr. Phil, Did a Bit Part in “Bewitched” Playing Uncle Arthurs Stepson Daffy, Life Coach,Worked as Oprahs Hair Dresser in the 90,s, Played Mr. Green Jeans on the Captain Kangaroo Show, Public Speaker, Judo Expert, Internationally Known Internet Marketer, World Champion Barefoot Water Skier, Played the Character White Fang on the Soupy Sales Show, Co Wrote “You Fill up My Senses with John Denver”, Appeared on the Midnight Special with Wolfman Jack as Lil Dog, Won the Johnny Mathis Look Alike Contest in 1969, Played C.W. Those are about half his claims Chris provided us with, and JC went so far to threatened to terminate my contract as the writer of the fish report and said he would take away my pension also. Pension JC??
Look JC you aren’t calling me anymore names! I have a report to write and I am going to do it now!!!

Jc Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. Jerry, explains that his charter business is geared more for families and novice anglers, making sure everyone who charters a boat with him have a great time and lots of fun. We welcome families, and groups. We want everyone who fishes with us to take all the sites in and have a memorable experience. This is what is most important to us. We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well lets get on with the fishing report for this past week.

WEATHER: Typical great weather this past week with little or no wind and great sunny days with highs in the mid 80,s and lows in the ladder to low 60,s. On the Pacific side cruising in our boat the water has been glassy with no wind affected seas at all. We do wish every day was like the last few days, pretty calm making for a smooth boat ride.

WATER:  We have some warm water moving in from the south over the last few days so we expect some temperature changes soon and this will no doubt effect the fishing this up coming week.The water right outside Cabo Harbor is right around 72 to 76 degrees and actually pretty nice. Pacific side up and around the Finger Baja where it was dipping down to 70 degrees is still cold up there and it is like night and day compared to the Pacific side and the Cortez side. Cabo Bay is sitting right where cold water and warm water meet.

BILLFISH: Striped Marlin wasn’t too bad as there is still Marlin around and we are averaging about one per trip which isn’t too bad. Most are being enticed by live bait, but it seems the fish are slow to bite. They seem to also be moving all over the place from the 1150 to the Light House. The Marlin fishing is nothing great, but it is happening somewhat.

DORADO: We landed a few and so did other fishing fleets, so I cant say its dead its just not great by no means.

WAHOO: Petty good action over the last week with our own Bob Marlin landing a few Wahoo and reports of other fleets running into the Wahoo bite. Trolling purple feathers seems to be working pretty well.

TUNA: This has been our best species this past week with lots of Tuna around in and around the San Jamie Bank. We are using king busters and cedar plugs to land the mostly 15 to 20lbs fish. Most are football size fish but there is a lot around, so if you want to catch some Tuna I would book a boat over the next 3 or 4 days before it changes.

INSHORE: Well we have lots of good inshore action happening with lots of Rooster Fish, Jack Crevell, Sierra and Yellowtail. One of our boats landed 6 Roosters all about 20lbs a piece. The Roosters were caught using live bait up and around the Pump House down to Pedregal Rocks. Jigging iron for the Yellowtail at Margaritas area has been productive and also in the mix some Amber Jacks were being taken. A few Groupers and Sheephead in and around the Pedregal Rocks. I mean there is all kinds of fish in this area to catch and its not like we are getting skunked but it has been down compared to normal. All in All the fishing this past week has been hit and miss and we aren’t knocking them dead.

JC,s Grilled Grouper!

This is a South Baja secret … and a great way to grill fish that leaves you worry-free. Not only does this make for easier fish cleaning, but the scales keep the fish from drying out while on the grill. Fish cooked this way consistently result in juicy, moist fillets.

Ingredients:

  • 4 tablespoons melted butter
  • 3 cloves minced garlic
  • 1 tablespoon finely grated Parmesan
  • 1 tablespoon Essence, recipe follows
  • 4 tablespoons olive oil
  • 1 (3 1/2 to 4 pound) grouper, fillets removed with scales intact
  • 1/4 cup finely chopped fresh herbs, such as tarragon, thyme, basil or chives
  • Arugula and Orange Salad, recipe follows

Jc,s Baja Seasoning:

  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried leaf oregano
  • 1 tablespoon dried thyme

Salad:

  • 2 cups arugula, cleaned
  • 2 cups baby spinach, cleaned
  • 1/2 red onion, sliced thinly
  • 1 orange, supremed
  • 2 tablespoons Dijon mustard
  • 1/4 cup orange juice
  • 1 tablespoon white wine vinegar

Directions
Preheat the grill to medium-high.
In a small bowl combine the butter, garlic, Parmesan, Essence, and olive oil and whisk to combine.
Lay the fillets on the grill, scale side down, and brush generously with the melted butter mixture. Close the grill cover and cook for 3 minutes. Open and brush again with the melted butter mixture. Repeat this process until the flesh is firm and opaque, for a total cooking time of about 12 to 15 minutes for this size fish. The last minute of cooking time, sprinkle with the fresh herbs. Remove from the grill and serve immediately with Arugula and Orange Salad.
Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup
Salad: In a large salad bowl, combine the arugula, spinach, red onion, and orange segments.
In a small bowl, whisk together the mustard, orange juice, and vinegar. While whisking, slowly drizzle in the oil. Whisk until emulsified and season with salt and pepper.

JC,s Grouper Fingers with Tartar Sauce!!

Ingredients:

  • Vegetable oil, for frying
  • 1 1/2 cups all-purpose flour
  • 1/3 cup cornstarch
  • 1 1/2 teaspoons dried dill
  • 1 teaspoon salt
  • 1/3 teaspoon ground mustard
  • 1 1/4 cups buttermilk
  • 4 grouper fillets, cut into 2-inch strips (about 1 1/2 pounds)
  • Yummy Sauce, recipe follows
  • Yummy Sauce:
  • 1/2 cup mayonnaise
  • 1/2 cup grated onion
  • 1/2 cup dill relish
  • 1/2 teaspoon dried dill
  • Squeeze lemon juice

Directions
In a large Dutch oven, pour the oil to a depth of 3 inches; heat the oil until a thermometer reads 350 degrees F.
In a shallow dish, combine the flour, cornstarch, dill, salt and mustard.
In a separate shallow dish, pour in the buttermilk. Dredge the grouper strips in the flour mixture. Dip in the buttermilk, and dredge in the flour mixture again to coat.
Fry the grouper fingers, in batches, until golden brown, 4 to 5 minutes. Drain on some paper towels. Serve immediately with the Yummy Sauce.
Yummy Sauce:
In a small bowl, combine the mayonnaise, onions, relish and dill. Season with lemon juice, salt and pepper. Cover and chill. Yield: 1 cup.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don’t want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
