Although the menu changes every month, the signature Oaxacan Tlayuda dish will always remain. The Tlayuda is prepared with your choice of chicken, flank steak, or vegetarian and served on a hand-made crispy corn tortilla with refried beans, cabbage, cheese and their special salsa. Another irresistible dish, the Chicken Supreme, is a select chicken breast prepared with onion marmalade and tamarind juice and served in a roasted red pepper and pasilla chili wheat stew.
The Organic salad with aged cotija cheese, black beans, and hibiscus flower tossed in chipotle chile vinaigrette makes for a great start to any meal. El Chilar opens their wine & tequila bar next door during the high season, where patrons can also dine. The bar features over 72 tequila labels and a selection of 200 wines from around the world.
