Chin’s, an Authentic Chinese Culinary Delicacy

Chin´s – Set at the high end of The Shoppes at Palmilla, the casual restaurant Chin’s brings a new level of oriental culinary experience to Los Cabos. It started in may 2014, a few months before hurricane Odile hit our coasts and in a considerable team effort of all the restaurant personnel it was allowed to be one of the very first restaurants to be back in operations after the storm has passed.

In the words of Héctor Cuyás, manager of Chin’s restaurant, we can acknowledge that the Chinese gastronomy is one of the richest due to the ancient culinary tradition of the country, which has expanded through the centuries all over the world. Some of the food basis of this cuisine are tender and rich in water, such as fruits and vegetables, they have a very refreshing effect. Also all kinds of meat are included here, white and red; beef, pork, chicken, fish. I would like to make special mention that they have a specialty called Pekin Duck, something not to be missed.

Another important thing I learned during this interview is that there are five basic flavors in the Chinese cuisine and that’s something it was pursued since the beginning of the restaurant operation.

Sweet, Salty, Acid, Bitter and Spicy.  All these thanks to the knowledge of the Chef Mr. Wong and Mr. Ching from the Old Cathay, who is the creator of the dishes that you can find in this amazing menu, is important to tell that most of the ingredients to prepare the meals are coming directly from China. By the way, Mr. Ching is the trainer of the chef Edilberto Camilo, head of the cuisine of Chin’s restaurant.

Edilberto Camilo, is a seasoned chef with good experience and constant training from Chinese nationals. He began his specialization in Chinese Cuisine in 1999, originally from Veracruz, but has been (as a good chef) on the road for some time. He worked at the Mandarin House and the Asia Restaurant in Mexico City. He started right at the beginning of the Chin’s restaurant operation; and is in constant training to keep the high quality and the excellent service. The people who work around him tell me that he’s is very dedicated, a fanatic of the order and that he keeps clean his kitchen at all times.
